Blueberry Buckle

Hi friends!

Today felt like a day for baking, so I decided I would try to make Blueberry Buckle, which is basically Blueberry Coffee Cake. I was very pleased with the final product and it was also a lot of fun to bake. This recipe would be a great dessert recipe anytime of the year. Here’s the recipe and the directions


  • 3/4 cup white sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries

For the topping:

  • 1/3 cup all purpose flour
  • 1/2 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter, softened


  • In a large bowl, cream together the egg, shortening, and 3/4 cup sugar
  • In a separate bowl, combine the salt, baking powder, and 2 cups all purpose flour
  • Stir flour mixture into the sugar mixture while alternating with the milk until well combined
  • Stir in the blueberries
  • Preheat oven to 375 degrees Fahrenheit
  • Grease an 8 inch by 8 inch pan
  • Poor batter into the pan
  • For the topping: combine the butter, cinnamon, 1/2 cup sugar and 1/3 cup flour and pour over top the batter
  • Bake for 25-30 minutes
